Exciting night at the Presbyterian Church last night. We had a chili cook-off and Emma was the Overall Winner! Her winning entry was her version of a Cincinnati Chili. She won a dishtowel with peppers on it and as she said, "The nicest cooking spoon we have in our kitchen."
Here is her winning recipe:
3# lean ground beef
2 small onions, chopped
2 cloves garlic, chopped
2 cans (29 oz) tomato sauce
2 cans (14 1/2 oz) fire-roasted diced tomatoes
1 t. cinnamon
1 t. allspice
2 t. salt
1 t. pepper
3 T. chili powder
2 to 3 T. brown sugar
2 T. white vinegar
1 cup of strong, brewed coffee
Brown meat. Add onions and garlic to meat. Cook for 3 to 5 minutes. Drain meat, onions, and garlic. Place meat, onions, and garlic in large pot. Add remaining ingredients. Cook on low for 2 to 3 hours, or can cook slowly in crock pot for 4 to 5 hours.
Serves 10 to 12.
Nice job Emma! Had no idea of your culinary talents. Mine are sorely lacking most days! I plan on making this chili next week. Completely intrigued...coffee & cinnamon?? A little scared but I'm trusting those Presbyterian judges (and you of course!)
